Nut-free Apple Pie Energy Balls

Energy balls stacked with protein, healthy sugar with a gorgeous taste of apple pie.
















PREP TIME: 15 MINUTES | TOTAL TIME: 15 MINUTES | SERVES: DEPENDING ON SIZE OF BALLS

INGREDIENTS

1 cup pitted dates soaked

1 cup oats

1/4 cup sunflower seeds

1 tsp cinnamon

1/2 cup very finely diced apple (about half a peeled medium-sized apple)


INSTRUCTIONS

  1. Soak dates in boiling water for about 5 minutes to soften.

  2. In a food processor, blend the oats, sunflower seeds and cinnamon until finely ground.

  3. Next, add the soaked dates and blend until incorporated and sticky enough to roll into balls.

  4. Fold in the diced apple, making sure that it's evenly distributed throughout the mixture.

  5. Roll mixture into approximately one-inch balls. Serve immediately or store in an airtight container in the fridge or freezer.
