Nut-free Passionfruit Bliss Balls

These delicious passionfruit bliss balls are nut-free, making them ideal for packing in lunchboxes. They are also dairy-free, nut-free, and can be stored in the freezer. Kids will enjoy their refreshing summer taste.


PREP TIME: 5 MINUTES | ADDITIONAL TIME: 1 HOUR | TOTAL TIME: 1 HOUR 5 MINUTES | SERVES: 18 BALLS


INGREDIENTS

¼ cup strained passionfruit pulp (approximately 6 fresh passionfruit)

½ cup shredded coconut

½ cup puffed rice

½ cup coconut flour

1 teaspoon honey

2 tablespoon coconut oil melted


INSTRUCTIONS

  1. Using a sieve, strain the passionfruit. Discard the seeds and try to get as much juice as you can from the passionfruit.

  2. Add all the ingredients to a food processor and blitz until it is smooth and thick.

  3. Remove tablespoonfuls of the mixture and shape (not really roll- sort of press) into balls. Alternatively press into ice cube trays.

  4. Set in the fridge for an hour.
